Preparation
- Step 1
- In a casserole over medium heat, add the oil and garlic. Mix well and add, in order, the carrot slices, peas, cabbage, asparagus and pineapple juice. Mix and let cook for 5 minutes.
- Step 2
- Add pineapple, mushrooms and bamboo shoots. Mix everything together.
- Step 3
- Add all remaining ingredients. Mix and cook for about 10 minutes. Serve with a bowl of rice for a vegetarian meal or as a side dish with a protein of your choice.
