Ingredients
- 1 large
- daikon cut into 1cm cubes
- 1 CASE
- of salt
- 2 CASES
- of sugar
- 4 CASES
- Korean chili flakes
- 1 CASE
- grated ginger
- 4 cloves
- crushed and finely chopped garlic
- 3
- chopped green shallots
- 3 CASES
- of fish sauce
Preparation
- Step 1
- Place daikon cubes in a large bowl and cover with salt and sugar. Leave at room temperature for one hour.
- Step 2
- Strain the daikon juice into another bowl and set aside.
- Step 3
- Add all other ingredients and mix well.
- Step 4
- Add 2 CAS of daikon juice to the bowl.
- Step 5
- Transfer to jars and leave at room temperature for at least 3 days before eating.
- Step 6
- Serve as condiments during the meal.
