Daikon Kimchi cubes

Ingredients

1 large
daikon cut into 1cm cubes
1 CASE
of salt
2 CASES
of sugar
4 CASES
Korean chili flakes
1 CASE
grated ginger
4 cloves
crushed and finely chopped garlic
3
chopped green shallots
3 CASES
of fish sauce

Preparation

Step 1
Place daikon cubes in a large bowl and cover with salt and sugar. Leave at room temperature for one hour.
Step 2
Strain the daikon juice into another bowl and set aside.
Step 3
Add all other ingredients and mix well.
Step 4
Add 2 CAS of daikon juice to the bowl.
Step 5
Transfer to jars and leave at room temperature for at least 3 days before eating.
Step 6
Serve as condiments during the meal.
