- lacquered duck bought at Kim Phat
- 5 mL (1 tsp.)
- of sugar
- 30 mL (2 tbsp.)
- of lukewarm water
- 1 cup
- of hoisin sauce
- 2 bags
- of Peking duck pancakes sold in the frozen food section
- 8
- green onions, cut into chunks and soaked in water
- 1
- English cucumber cut into sticks
- 1 jar
- of pickled daikon and carrots*.
Preparation

- Cut the duck into pieces with the skin longer than the width.
- Step 3
- Set aside. In a small saucepan, heat the sugar, warm water and hoisin sauce until it boils. Heat the pancakes in the microwave oven as indicated on the packet. Arrange the pieces of green onion, cucumber and pickled daikon and carrot mixture in a separate dish. Roll the pancakes with all the ingredients and drizzle with the heated sauce. In China, Peking duck is only eaten with the skin but be generous and eat the flesh as well.

- If you have any meat left over, use it to make a Vietnamese sandwich with all the same ingredients and add bread and cilantro sprigs. You can also use the meat to make a stir-fry with vegetables. Don't throw away the carcass of the duck, but rather heat it for one hour with water to make a broth. You will obtain an incredible soup-meal in which you will add noodles, the remaining pieces of duck and a sliced shiitake mushroom.
